  • 3 pkgs low fat cream cheese
  • 2 12-oz pkgs low fat sausage
  • 40 jalapeno chili peppers
  • 1 c shredded cheese (any kind, optional)

Preparation

Step 1

Fill sink with ice water. With gloves on, pour all jalapenos into the sink. Use a knife to cute in half and use a spoon to take out seeds and veins. (The cleaner you scrape the inside the less heat there will be.) After all 40 are clean, wash and drain. Cook sausage. Drain sausage and add cream cheese and shredded cheese. Fill each pepper half with cream cheese mixture. Bake at 350 for 30 mins. May be frozen in zip lock bags before cooking. When cooking a frozen pepper bake at 350 for 40 mins.
