Ingredients

  • Sauce:
  • 1 large pkg. fresh spinach
  • 3 whole chicken breasts, boneless
  • 2-3 tbs butter
  • 3 cloves garlic, crushed
  • 1-1 1/2 cups Feta cheese
  • 2 cups Italian bread crumbs
  • 1/2 cup oil
  • 1/2 cup butter
  • 2 cups sliced fresh mushrooms
  • 1 cup white wine
  • 1 cup chicken broth
  • 1 tbs lemon juice
  • 1 tbs flour

Step 1

Cook spinach according to package directions; drain. Pound chicken breasts between plastic wrap until 1/4 inch thick. Saute spinach in 2-3 Tbsp. of butter with garlic for about 5 minutes. Divide spinach mixture and spread one-sixth on each chicker breast. Crumble Feta cheese on each, then roll and seal with toothpicks. Dip into bread crumb: and cover lightly. Brown all chicken breasts in oil, turning frequently, for about 6-7 minutes. Remove and place in baking dish. Bake for 20-30 minutes at 350°. Just before chicken is done, melt 1/2 cup butter in skillet and saute mushrooms for 3-4 minutes. Add white wine, chicken broth, lemon juice and flour to mushrooms and simmer until it cooks down, about 10 minutes. Pour mushroom sauce (will not be thick) over chicken and serve immediately.
