Ingredients
- cup butter or margarine, softened GLAZE:
- 1 cup sugar 1/4 cup confectioner's sugar
- 4 1/2 teaspoons lemon juice 2 tablespoons lemon juice
- 2 eggs
- 1 1/2 cups A-P flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 1/4 cup flaked coconut
- 1 teaspoon grated lemon peel

Step 1
Preheat oven to 350 degrees F Grease 8-in by 4-in by 2-in loaf pan.
1. In a mixing bowl, cream butter, sugar, lemon juice. Add the eggs, one at a time, beating well after each addition.
2. Combine flour, baking powder and salt; add to creamed mixture alternately with milk. Stir in the coconut and lemon peel.
3. Pour into greased pan. Bake for 60-70 minutes or until a toothpick inserted neat the center comes out clean.
3. Cool for 10 minutes; remove from pan to wire rack. Combine glaze ingredients and brush over loaf.
