Chocolate Cake

Unsweetened applesauce makes a moister cake without oil.
Cocoa powder has less fat than baking chocolate.

Ingredients
- Glaze:
- 1 cup buttermilk
- 1/2 cup unsweetened applesauce
- 1/3 cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1 cup confectioners sugar
- 2 Tbsp unsweetened cocoa powder
- 1 Tbsp corn syrup
- 1 Tbsp hot water

Preparation
Step 1
Preheat oven to 350 deg. Spray a 9" round cake pan with vegetable cooking spray. Set aside.
In a small bowl, combine buttermilk, applesauce, oil, egg, and vanilla. Mix well. Set aside.
In a large bowl, combine flour, sugar, cocoa, and baking soda. Stir to break up lumps. Add buttermilk mixture; whisk until smooth, about 1 minute. Pour batter into prepared pan.
Bake until a toothpick inserted in center comes out clean, about 35 minutes. Cool in pan on a wire rack for 20 minutes. Loosen around edges, turn cake out onto rack, and cool completely.
To prepare glaze, in a double boiler over simmering water, stir together glaze ingredients until the sugar dissolves. Add 1 tablespoon of hot water if glaze seems too thick. Drizzle over top of cake. Let stand for 30 minutes.
