Ingredients
- Sauce:
- 1 clove garlic
- 1/4 c coconut milk
- 1/4 c sweet potato puree
- 3 tabl natural peanut butter (creamy)
- 2 tabl reduced-sodium soy sauce
- 2 tabl lime juice (about 1 large lime)
- Pinch of cayenne pepper (optional)
- Skewers:
- 1 1/2 lbs boneless, skinless chicken breasts
- 30 (10in) wooden skewers
- 1/2 tea salt
- 1/2 tea garlic powder
- 1/4 tea pepper
- 1/4 tea sweet paprika
- 2 tabl olive oil

Step 1
1. Chop the garlic in a mini-chopper. Add the coconut milk, sweet potato puree, peanut butter, soy sauce, lime juice and cayenne. Blend until smooth. Set aside.
2. Cut the chicken into thin strips, about 1in wide. Thread the chicken onto the skewers. Sprinkle w/the salt, garlic powder, pepper and paprika.
3. Warm 1 tabl of the olive oil in a large skillet. Add 1/2 the skewers. Cook 7-8 min per side, turning 1x, until the chicken is cooked through and no longer pink. Transfer to a platter and add the remaining tabl of oil. repeat with the rest of the skewers. Serve immediately w/ dipping sauce.
