Ingredients
- 1/2 lb Kassari cheese in a wedge
- 1 Tbsp butter
- 2 Tbsp Brandy
- Fresh lemon half

Step 1
Slice the cheese in half to make 2 thin wedges. Place the cheese side by side in shallow container. Dot with butter.
Bake in 350 oven for 10-15 minutes or until soft and pale brown around the edges. Remove from oven.
Warm the brandy in a ladle or long handled spoon over burner. When very warm, move the ladle aside slightly and allow the flame to ignite the brandy. Gently pur the flaming brandy over the cheese in a spreading motion. Let burn until the flames are nearly extinguished then squeeze with lemon over the top.
Serve with pita bread wedges or crackers.
Light the brandly with a butane utility lighter if don't have a gas range.
