- 1 tbsp cornstarch
- 1 tbsp water
- 2 tsp sherry or rice wine
- 1 tsp salt
- 12 oz chicken breasts, cubed
- 1/4 cup chicken stock
- 2 tbsp soy sauce
- 1/2 tsp sugar
- 2 tbsp vege oil
- 2 tsp garlic, minced
- 2 tsp ginger, minced
- 1/2 cup baby carrots, sliced
- 1 1/2 cups baby corn
- 1/2 cup frozen peas

Directions
1. Marinate chicken in coenstarch, sherry and salt for at least 20 mins.
2. Mix stock, soy sauce and sugar.
3. Saute garlic and ginger, add chicken, then carrots.
4. Add stock mixture and corn, cook until carrots are tender-crisp; add peas and heat through.
