  • 1 cup all-purpose flour (1/4 Cup)
  • 1 cup whole wheat flour (1/4 Cup)
  • 1 tablespoon brown sugar (3/4 tsp)
  • 2 teaspoons baking powder (1/2 tsp)
  • 1 teaspoon salt (1/4 tsp)
  • 2 egg whites (1/2 Egg white)
  • 1 egg, lightly beaten (1/4 Egg)
  • 2 cups fat-free milk (1/2 Cup)
  • 2 tablespoons canola oil (1 1/2 tsp)
  • 1 medium apple, peeled and chopped (1/4 Apple)
  • 1/2 cup chopped walnuts (2 Tbsp)
  • Maple syrup

Step 1

1. In a large bowl, combine the flours, brown sugar, baking powder and salt. Combine the egg whites, egg, milk and oil; add to dry ingredients just until moistened. Fold in apple and walnuts.

2. Pour batter by 1/4 cupfuls onto a hot griddle coated with cooking spray; turn when bubbles form on top. Cook until the second side is golden brown. Serve with syrup. Yield: 18 pancakes.
