Ingredients

  • 3/4 cup unbleached all-purpose flour
  • 3 tablespoons sugar
  • 3/4 teaspoon fine sea salt
  • 1/3 cup beer (lager or pilsner)
  • 1 large egg, separated
  • 2 large firm apples, such as Granny Smith or Fuji
  • 1 quart peanut or canola oil for frying
  • Honey for drizzling

Preparation

Step 1

In a bowl, whisk together flour, 2 tablespoons sugar and salt. Add beer, 1/4 cup tepid water, egg yolk and Grand Marnier; whisk to combine. Set aside batter.

Peel, core and slice each apple into 8 to 10 (1/8-inch-thick) rings. Sprinkle slices on both sides with remaining tablespoon sugar and stack on a plate.

Fill a large straight-sided skillet or wide pot with 1 inch oil; heat oil over medium heat to 380º. Line a large plate with paper towels.

Whisk egg white to soft peaks, then gently but thoroughly fold into batter.

In batches, dip apple rings into batter to coat both sides, and fry, turning once, until fritters are golden and crisp, about 4 minutes. Drain on paper towels, then drizzle with honey. Serve warm.
