Ingredients

  • 3 cups all-purpose flour
  • 2 tsp. baking soda
  • 2 cups white sugar
  • 1 tsp. salt
  • 1 tsp cinnamon
  • 2 tsp baking powder
  • 1 can pumpkin
  • 4 eggs
  • 1 1/2 cups oil
  • 2 cups semisweet mini chocolate chips

Step 1

1. Preheat oven to 400 degrees F. Grease 24 muffin cups or line with paper muffin liners. You can make them into four mini loaves also.
2. In large bowl, stir together flour, baking soda, sugar, salt, and nutmeg. In a separate bowl, beat together pumpkin, eggs, and oil. Stir pumpkin mixture into flour mixture; beat until well blended. Fold in chocolate chips.
3. Bake in preheated oven for 16-20 minutes or until toothpick inserted into center of muffin comes out clean.
