GRILLED PORK LOIN W/ FIRE-ROASTED PINEAPPLE SALSA

Ingredients
- 1 Tbsp. tomato paste
- 1 Tbsp. chili powder
- 1/2 cup orange juice
- 3 Tbsp. fresh lime juice
- 1 Tbsp. olive oil
- 1 lb. pork tenderloin
- 1 small pineapple (about 1 1/2 lb, diced into 1-in cubes
- 1/2 cup pineapple (or orange) juice
- 1 large red bell pepper, thinly sliced
- 1/4 small red onion, finely chopped
- 1/3 cup chopped fresh basil

Step 1
Mix tomato paste with chili powder. Combine with orange juice, lime juice and oil in a resealable bag. Add tenderloin and marinate for a least 3 hrs. Heat a large pan over high heat to the smoking point, 3-4 min. Brown pineapple 4-5 min, stirring occasionally. (I didn't think it browns well) Remove pineapple from heat. Combine in a bowl w/ pepper, onion and basil. Heat grill. Cook pork tenderloin 18-20 min. Discard excess marinade. Let pork rest 5 min. Spoon salsa over pork.
*I usually use 2 tenderloins and double the marinade. And I chop the pepper and not slice it.
