  • 1 chayote squash peeled and cut into matchsticks (remove the pit)
  • 1 large orange, peel sliced off and fruit cut into segments
  • 2-3 green onions sliced into thin rounds
  • 1 lime zested and juiced
  • 1 Tbsp olive oil
  • 5-6 sprigs of cilantro, chopped
  • salt and pepper to taste



Step 1

Basically, put it all in a bowl and (gently) mix it up. If you want to complicate things, go ahead and create an emulsion from the olive oil and lime juice. But really, it’s hardly worth the effort and extra dirty dishes. If you want to take the acidity down, you could just use some juice from the orange, but the extra tartness is a big part of why this is so refreshing.
