  • 1/2 cup flour
  • 2 large eggs
  • 1 cup panko bread crumbs
  • 1 1/4 cups parmesan, shredded
  • 4 thin cut chicken cutlets, 3 to 4 oz each
  • Salt and Pepper
  • 7 tbsp olive oil

Step 1

1. Spread flour in shallow dish. Beat eggs in second shallow dish. Combine panko and 1 cup parmesan in third shallow dish. Pat chicken dry with paper towels and season with salt and pepper. One at a time dredge cutlets in flour, dip in eggs and coat with panko mixture, pressing to adhere.

2. Heat 3 tbsp oil in skillet until shimmering (non stick pan). Cook 2 cutlets until golden brown and crisp, about 2 minutes per side. Transfer to paper towel lined plate and repeat with 3 tbsp more oil and remaining cutlets.
