Ingredients

  • 4 - 10 " (burrito size) flour tortillas
  • 1 lb. ground beef
  • 1 carrot, shredded
  • 1 package (1 oz) taco seasoning mix
  • 1 cup chopped lettuce
  • 1/2 cup shredded cheddar
  • 2 plum tomatoes, seeded and chopped
  • sour cream
  • salsa

Preparation

Step 1

Heat oven to 375 degrees. Cut three 4 1/4" circles out of each tortilla. Lightly coat torilla circles with nonstick spray. Place each circle into a muffin pan to shape into a cup. Bake 8-9 minutes, until crisp. Cool.

Meanwhile, cook beef and carrot with taco seasoning according toi package directions. Divide beef mixture, lettuce, chedder and tomatoes among taco cups.

top with dollop of sour cream and salsa.
