Ingredients

  • 1 tbsp. lemon zest
  • 5 tbsp. olive oil
  • 4 tsp. chopped fresh oregano leaves
  • 4 cloves garlic, minced
  • 1/2 teaspoon ground black pepper
  • 24 fresh or frozen jumbo shrimp, shelled & deveined
  • 2 tbsp. lemon juice
  • 3 tbslp. unsalted butter
  • Sprigs fresh oregano leaves

Step 1

1) Stir the lemon zest, 3 tbsp. oil, 1 tsp oregano, 2 tsp garlic and the b lack pepper in a shallow non-metallic dish or a resealable plastic bag.

2) Add the shrimp and turn/toss to coat.

3) Cover dish or seal bag and refrigerate for 30 minutes.

4) Heat remaining oil in 8-inch skillet over medium heat. Add the remaining garlic, cook and stir until tender.

5) Stir in lemon juice and remaining oregano.

6) Remove the skillet from the heat, add the buter and stir until butter is melted...keep warm!

7) Remove shrimp from mariande and discard the marinade. Place shrimp on a rack in a broiler pan and broil shrimp 6 inches from the heat for 5 minutes or until the shrimp are cooked through, turning the shrimp over one, halfway through broiling.

8) Place shrimp on a serving platter and drizzle with the butter mixture...serve with garlic bread and garnish with oregano sprigs (optional).
