Ingredients

  • 12 C. sliced carrots
  • 3 C. chopped onion
  • 3 C. chopped celery
  • 12 Tbs. butter
  • 18 Tbs. flour
  • 174 oz. chicken broth
  • 15 1/5 C. cubed cooked chicken
  • 1 lg. bag wild rice, prepared
  • 1 1/2 C. half & half
  • 1 tsp. pepper
  • 1 tsp. salt
  • basil and oregano as desired

Step 1

In a large saucepan, sauté the carrots, onion and celery in butter until tender. Stir in flour until blended; gradually add broth, basil and oregano. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the chicken, rice, cream, salt and pepper. Heat through.
