Seafood Newburg Casserole

Ingredients
- 1 1/2 pounds shelled deveined uncooked medium shrimp, tails removed
- 1/2 pound fresh uncooked crabmeat or 2 (6-oz.) cans crabmeat, drained
- 1/4 cup dry sherry
- 3/4 cup uncooked regular long-grain white rice
- 1 1/2 cups water (for rice)
- 8 tablespoons butter (divided into 2 and 6 tablespoons)
- 1 shallot, minced
- 8 ounces (3 cups) sliced fresh mushrooms
- 1 tablespoon lemon juice
- 1/2 cup all purpose or unbleached flour
- 1/2 teaspoon seasoned salt
- 1/4 teaspoon pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon ground nutmeg
- 1 pint (2 cups) half-and-half
- 1/2 cup milk
- Topping
- 1/4 cup margarine or butter, melted
- 1 cup Panko Bread Crumbs (I use Kikkoman)
- 1 teaspoon Italian Seasoning

Preparation
Step 1
In a large bowl, combine shrimp, crabmeat and sherry; mix gently to coat. Cover and refrigerate 1 hour.
Heat oven to 350°F.
Spray a 13x9-inch (3-quart) glass baking dish with nonstick cooking spray.
Cook rice in water as directed on package.
Meanwhile, melt 2 tablespoons of the butter in a large saucepan over medium heat. Add the shallots, mushrooms and lemon juice. Cook and stir 5 minutes or until tender.
Reduce heat to medium-low. Add the remaining 6 tablespoons of butter, stir until melted. Add flour, seasoned salt, paprika and pepper to the mushroom mixture. Mix well and cook until bubbly. Gradually add the half-and-half and milk, stirring constantly until mixture boils and thickens. Remove from heat.
Add the seafood mixture and cooked rice to the mushroom sauce and stir gently to mix. Pour into the sprayed baking dish.
In a small bowl, combine the topping ingredients and mix well. Sprinkle over the top of the casserole.
Bake at 350°F. for 30 to 35 minutes or until bubbly and crumb topping is golden brown. Let stand 5 minutes before serving.
NOTE:
I changed the bread crumbs to Panko Bread Crumbs, they are half the calories. Next time I will try to reduce the butter in the crumbs to 2 or 3 tablespoons or just dot the crumbs with butter. Spraying with olive oil would probably work as well, but may change the flavor.
