Ingredients

  • 1 1/3 C. shortening
  • 5 1/3 C. sugar
  • 8 eggs
  • 6 C. grated zucchini
  • 1 1/3 C. water
  • 4 tsp. vanilla
  • 6 2/3 C. flour
  • 4 tsp. baking soda
  • 2 tsp. salt
  • 1 tsp. baking powder
  • 4 tsp. pumpkin pie spice
  • 12 Tbs. unsweetened cocoa powder
  • 1 1/3 C. mini chocolate chips

Preparation

Step 1

Preheat oven to 350*. Grease mini loaf pans.
In a large bowl, cream shortening and sugar together. Mix in eggs. Add zucchini, water, and vanilla; stir. Blend in flour, baking soda, salt, baking powder, and pumpkin pie spice.
Divide batter in half, and add cocoa powder and chocolate chips to one of the halves. Pour plain batter into bottom of pans. Pour chocolate batter on top of plain batter.
Bake until wooden pick inserted into center comes out clean, about 30-35 minutes. Cool 10 minutes and remove from pans.
