Ingredients

  • 6 cups Macadamia nuts
  • 1 1 pound box box graham crackers
  • 8 tsp unsalted butter (1 Stick) , melted
  • 10 ounces Bittersweet chocolate, finely chopped
  • 1 1/2 cups Packed sweetened shredded Coconut
  • Caramel Sauce Recipe
  • 1 1/4 cup sugar
  • 1/3 cup water
  • 1 cup heavy cream
  • 1 tsp vanilla extract

Step 1

1. Heat oven to 350 degrees. Spread macadamia nuts on a baking sheet, and bake until golden, about 10 minutes. Set baking sheet on wire rack to cool.

2. Line an 11-by-18-inch baking pan with parchment paper. Using a food processor or rolling pin, finely crush graham crackers. Place in a medium bowl. Stir in melted butter. Press mixture into the bottom of prepared baking pan in an even layer.

3. For best results, melt chocolate before pouring it over the graham cracker crust. Then sprinkle the chocolate over the graham crackers. Sprinkle the coconut over the chocolate. Lastly, sprinkle the reserved nuts over the coconut.

4. To make the caramel sauce, heat water and sugar together over a medium flame and stir continuously. Slowly raise flame until the sugar/water start to boil. After the mixture turns into a syrup, put flame back on medium and continue stirring until syrup turns a LIGHT brown color. Remove from the hot burner and slowly pour and mix in the heavy cream. Put back on the stove over a low flame; mix until the caramel syrup and heavy cream combine, then add the vanilla extract. Drizzle caramel over macadamia nuts. Bake until golden, about 20 minutes (you can also bake before you add the caramel sauce, which is what I did :).

Transfer pan to a wire rack to cool. Cut into 3/4-by-1 1/4-inch pieces.
