Ingredients

  • 2 Tbsp. butter
  • flour
  • 1 9 oz. package single layer yellow cake mix
  • 2 cups mixed fresh fruit (such as halved grapes, mblueberries, sliced nectarines and peaches)
  • 1/4 cup apricot preserves or red currant jelly, meltedm,divided
  • Whipped cream or ice cream

Step 1

Preheat oven to 350 degrees.

Spread butter evenly over the bottom of a round 8" cake pan; dust with flour.

Prepare the cake batter according to package directions.

Arrange fruit decoratively in the prepared pan. Drizzle with 2 Tbsp. of the melted preserves. Spoon the cake batter evenly over the fruit. Tap the pan on the counter to distribute the batter evenly.

Bake until the center of the cake springs back when gently pressed,mabout 35 minutes. Cool the cake in the pan on a rack for 10 minutes. Loosen the edges and invert onto a serving plate.

Heat the remaining preserves, drizzle over the cake. Serve with whipped cream or ice cream, if desired.
