Ingredients

  • 1 19-oz/540 mL can black beans, drained and rinsed
  • 1 cup corn niblets
  • 1 sweet red pepper roasted (page 49), peeled, seeded, and diced
  • 2 tomatoes, seeded and diced
  • 1 chipotlE or jalapeno, finely chopped
  • 1 clove garlic, minced
  • 1/2 cup fresh cilantro or basil
  • 1 tbsp lime juice
  • 1/2 tsp salt
  • 1/2 pepper
  • 6 oz chevre (goat cheese)

Step 1

In a medium bowl, combine black beans, corn, red pepper, tomatoes, chipotle, garlic, cilantro, lime juice, salt and pepper. Spoon into a 12 X 8 inch/2.5 L baking dish.

Cut goat cheese into rounds or chunks and place on top of salsa. Just before serving, place under broiler for 3 to 4 minutes (watch closely) until lightly browned and warm.

Serve warm with tortilla chips.
