Zucchini Bread

Larry G. made this delicious Zucchini Bread using his NuWave Oven Pro. Perhaps the best part about Larry’s recipe is it’s adaptable! This recipe can be used in the NuWave Elite or Pro, and it can even be adjusted to make muffins!

Ingredients
- 1 3/4 cups sugar
- 2 cups flour
- 1 cup coconut
- 1 cup raisins
- 1/2 cup chopped nuts
- 2 cups tightly packed zucchini, grated
- 3 eggs, beaten
- 3/4 cups vegetable oil
- 3 tsp. cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 teaspoon soda
- 3 teaspoons vanilla

Preparation
Step 1
1. Mix all dry ingredients together in bowl.
2. Add zucchini, eggs, oil and vanilla; mix well.
3. Pour batter into 2 greased and floured bread pans.
4. Place pan on 2-inch rack and add Extender Ring to base.
5. Bake on Power Level 8 for 50-55 minutes.
6. If you’re baking muffins, place them on the 1-inch rack and bake for 15-17 minutes.
Tip: If you’re using the NuWave Elite, bake at 300°F.
