Ingredients
- 3 # sweet potatoes or yams, fresh or canned
- 2 large eggs
- 3/4 C packed brown sugar, divided
- 1 tsp. salt
- 1 tsp. cinnamon
- up to 1/2 C orange juice
- 1 C pecan halves

Step 1
Preheat oven to 375 degrees.
In large bowl beat cooked or canned sweet potatoes until smooth. Beat in eggs, 1/4 C brown sugar, 1/4 C of butter, salt, and cinnamon. Starting with 1/4 C, beat in just enough orange juice to make the mixture moist and fluffy.
Scrape mixture into 2 - 3 quart soufflé dish and smooth surface into even layer. Arrange pecan halves over the top. Sprinkle remaining 1/2 C brown sugar over the pecans. Drizzle the top with remaining 1/4 C of butter.
Bake 25 to 30 mionutes until top is bubbly all over.
