Ingredients

  • 1 15 oz can of chick peas, rinsed and drained
  • 3 cups chicken broth
  • 3 tbsp creamy peanut butter
  • 2 onions
  • 1 - 1" piece fresh ginger - peeled and minced
  • 2 tsp curry powder
  • 1 - 14 oz can diced tomatoes
  • 1 tbsp tomatoe paste
  • 1/4 tsp cayenne
  • 1/4 cup chopped fresh cilantro
  • 2 scallions, thinly sliced

Step 1

Combine chick peas, broth and peanut butter in food processer till smooth. Cook onions and ginger in a small amount of oil till soft. Stir in curry powder and cook one minute. Add tomatoes and their juice, paste, cayenne and chick pea puree and bring to boil. Reduce heat and simmer - still occasionally and allow flavors to blend. Ladle into bowls. Sprinkle with cilantro and scallions if required.
