Ingredients
- Mix broth, cornstarch, sugar, soy sauce, vinegar and red pepper; set aside.
- Heat wok or 12-inch skillet over high heat. Add oil; rotate wok to coat side. Add chicken, garlic and gingerroot; stir-fry about 3 minutes or until chicken is no longer pink in center. Add bell pepper; stir-fry 1 minute.
- Add broth mixture to wok. Cook and stir about 1 minute or until sauce is thickened. Stir in peanuts. Sprinkle with onions.

This colorful stir-fry gets its kick from a dash of red pepper.

One of my favorite stir-fry recipes. I switch it up often by adding green peppers, cauliflower, or mushrooms to it. Also, if you like it really saucy, consider doubling the ingredients for the sauce. So delicious!
This is really good. I didn't have fresh ginger,so used ground instead. Served it over brown rice. This is a make again recipe.
Super yum! I used dried (ground) ginger instead of fresh, and it worked just fine. Added leftover canned corn for a sweet little crunch.
omg we totally loved this meal. I am very picky but i did use the red pepper but no ginger. I added a season that we just purchased call slap your mama its kind of like season salt w a kick. If you have not made this you are missing out.
My daughter and I tried this last night and it was delicious! I didn't add the gingeroot or peppers. I did add mushrooms and zuchinni. I doubled the amount of sauce and mixed it all together with 2 packs of ramen oriental flavored noodles.We're on a very tight budget so this meal was very healthy yet didn't cost an arm and a leg. We couldn't have been more happy with it. And there's still a full serving left!
