PORK TENDERLOINS WITH APPLES, DATES AND BABY POTATOES

Ingredients
- 2 1lb pork tenderloins
- 10 applewood-smoked bacon slices
- 1 tbsp olive oil
- 2 small onions, peeled, quartered
- 2 Golden Delicious apples, peeled, cored, quartered
- 12 baby potatoes
- 12 dates, pitted
- 4 garlic cloves, minced
- 1 tsp ground cinnamon
- 1 tsp ground cumin
- 3/4 cup apple juice
- 1/4 cup water

Step 1
1. Sprinkle tenderloins with salt and pepper.
2. Wrap 5 bacon slices around each tenderloin, securing bacon with toothpicks.
3. Tie kitchen string around bacon-wrapped tenderloins to secure, then remove toothpicks.
4. Preheat oven to 350°F.
5. Heat oil in large ovenproof pot over medium heat.
6. Add pork; cook until browned on all sides, turning often, about 12 minutes.
7. Transfer to platter.
8. Add onions and apples to pot and sauté until golden, about 5 minutes.
9. Add potatoes, dates, garlic, cinnamon and cumin; stir 1 minute.
10. Return pork to center of pot.
11. Add apple juice and 1/4 cup water; bring to a boil, scraping up any browned bits.
12. Sprinkle with salt and pepper.
13. Cover and roast until pork is cooked through and potatoes are tender, about 30 minutes.
14. Remove string from pork and slice pork crosswise.
15. Divide pork, onions, apples, potatoes, dates and pan juices among plates.
