Ingredients
- 4 1/2 lbs. ground beef
- 3 onions, chopped
- 1 lg. can diced tomatoes
- 48 oz. frozen or can corn
- 3 15oz cans black beans, rinsed and drained
- 43.5 oz. chicken broth
- 2 cans green chilies
- 3 tsp. garlic powder
- 4 1/2 tsp. southwest chpotle seasoning blend
- 4 1/2 C. cooked rice

Preparation
Step 1
In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain.
Transfer to large soup pot. Stir in the tomatoes, corn, black beans, broth, chilies, garlic powder and seasoning blend. Cover and cook on low for 1 hour, or till heated through.
Stir in rice; heat through. Sprinkle each serving with shredded cheddar cheese.
