Roasted Red New Potatoes with Sweet Paprika Butter and Parsley

Ingredients
- 3 # small red new potatoes
- 1 tbsp extra-virgin olive oil
- 1/4 c (1/2 stick) butter
- 2 tsp sweet paprika
- 1/4 c parsley leaves, chopped
- Salt and freshly ground balck pepper to taste

Step 1
Preheat oven to 400 degrees.
Sort potatoes. Those that are 2 inches or less in diameter can be left whole; halve remainin gpotatoes. Place them in a roastin gpan and coat very lightly with a ddrizzle of evoo. roast potatoes 20-25 minutes, until just tender. Melt butter in a small pan with paprika. Transfer potatoes from the oven to a bowl. Pour melted paprika butter over the potatoes. Sprinkle in parsley and season the potatoes with salt and pepepr. Toss the potatoes with paprika butter to coat evenly. Adjust salt and pepper to taste and serve.
