Ingredients
- 1 Tbsp dried thyme
- 2 tsp table salt, coarse
- 3/4 tsp black pepper, coarsely ground
- 1 large vidalia onion(s), thinly sliced
- 2 small Granny Smith apple(s), cored and thinly sliced
- 2 pound(s) lean pork loin, boneless pork top loin roast, trimmed of all visible fat

Preparation
Step 1
Preheat the oven to 450°F. Mix together the thyme, salt, and pepper. Scatter the onion and apples over the bottom of a rectangular roasting pan and sprinkle with 1/2 tablespoon of the seasoning mixture. Place the roast on top and rub the exposed surface with the rest of the seasoning mixture. Roast 15 minutes.
Reduce the oven temperature to 300°F and roast until the pork reaches an internal temperature of 155°F, 35–40 minutes. Remove from the oven and let stand 10 minutes before slicing. Serve with the apples and onion on the side.
