Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup butter or margarine
- 3/4 cup packed brown sugar
- 1/2 cup granulated sugar
- 1 egg
- 1-1/2 teaspoons vanilla extract

Step 1
Sift together flour, baking soda, and salt, set aside. In large mixer bowl beat butter or margarine for 30 seconds. Add sugars and beat until fluffy. Add egg and vanilla, beat well. Add the dry ingredients, beat well. Divide dough in quarters, cover and chill about 2 hours. Continue as directed in Red-Panel cookies, and Lotsa Chip recipes. Or, roll basic dough on lightly floured surface to 1/8" thickness, cut the dough into 2-1/2" cookies. Bake in a 375 degree oven for 6-7 minutes. Makes 60 cookies.
Red-Panel Cookies:
Prepare basic rolled cookie dough as above. Working with 1/4 of the dough at a time, roll to 1/8" thickness on lightly floured surface. Cut into desired shapes such as circles, triangles, diamonds, and hearts, place on foil lined cookie sheet. Cut out a small heat, star, circle, or diamond (1-1/4") in center of each. Set aside. Meanwhile, crush 3-4 ounces hard red candy, place about 1/2 teaspoon crushed candy in center of each cookie. Bake in a 375 degree oven for 6-7 minutes or until andy melts and cookies are golden. Cool. When cookies are thoroughly cooled, remove from foil. Makes about 36 cookies.
Lotsa Chip Bars:
Prepare basic dough except decrease the flour to 1 cup and omit the granulated sugar and the salt. Stir in 3/4 cups quick-cooking oats and 1/2 cup chopped unsalted peanuts. Spread mixture into a greased 13 x 9 x 2" baking pan. Sprinkle one 6 oz. package semisweet chocolate pieces over top. Bake in 350 degree oven 4 minutes. Remove from oven, cut through dough with knife to marble. Bake 15 minutes more. Cut into bars while warm.
