Ingredients
- 1 bag (16 ounces) peeled baby carrots
- 1 tbsp olive oil
- 1 medium Gala or Golden Delicious apple, unpeeled, cored and cut into 1/2-inch dice
- 2 tsp curry powder
- 1 garlic clove, crushed
- 1 pork tenderloin (about 1 lb) cut into 3/4-inch-thick slices
- 1/2 tsp salt
- 1/4 cup apple cider or apple juice
- 1 large plum tomato, seeded, chopped

Step 1
1. Place carrots in covered dish with 1/4 cup water.
2. Microwave on High 6 minutes or until tender.
3. Meanwhile, in nonstick 12-inch skillet, heat oil over medium-high heat.
4. Add apple, curry powder, and garlic, and cook 1 minute, stirring.
5. Add pork and salt, and cook 6 to 8 minutes or until pork is slightly pink in center.
6. Add cider and cooked carrots with any liquid, and heat to boiling; cook 1 minute.
