Ginger Cake

The recipe is for one layer. I made 2 layers and frosted with penuche frosting. Everyone enjoyed it!
This uses a partial bottle of flat Guiness stout.

Ingredients
- 1 1/4 cups all purpose-flour (about 5 1/2 ounces)
- 1/2 tsp. ground ginger
- 1/2 tsp. ground cinnamon
- 1 tsp. baking soda
- 1/4 tsp salt
- 1/2 cup packed dark brown sugar
- 4 1/2 Tabls. butter, softened (you can also use additional applesauce or oil)
- 1 large egg
- 1/3 cup applesauce
- 1/2 cup molasses
- 1/3 cup flat Guinness stout

Preheat oven to 350 degrees. Coat a 9-inch round cake pan with cooking spray, set aside
Lightly spoon flour into dry measuring cup, level with a knife. Combine flour, ginger, and next 3 ingredients in a bowl, stirring with a whisk. Place sugar and butter in a large bowl; beat with a mixer at medium-high speed until well blended (about 3 minutes). Add egg; beat well. beat in applesauce and molasses (batter may look slightly curdled). Reduce mixing speed to low. Add one-third of flour mixture, and beat just until blended. Repeat procedure twice with remaining flour mixture. Add stout, and beat just until combined. Scrape batter into prepared pan. Bake at 350 degrees for 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes; remover from pan. Cool completely
