Jamie Oliver's lamb shanks

Ingredients

  • 4 lamb shanks
  • 1/2 bottle red wine
  • 1/2 litre beef stock
  • 2 onions - roughly chopped
  • 1 carrots - roughly chopped
  • 6 garlic cloves - peeled
  • 1 rosemary sprigs
  • 2 thyme sprigs
  • 1/2 tsp tomato paste
  • red current jelly
  • salt and pepper

Preparation

Step 1

Preheat oven to 400
Season lamb shanks with salt and pepper and brown all over in a dutch oven
Add everything else to the pot and place in oven. After 30 minutes, reduce heat to 325 and leave for 3 1/2 to 4 hours
Carefully remove shanks from pot, set aside and keep warm
Strain remaining juices into a saucepan and heat until slightly reduced
