Mini Plain Cheesecakes

Ingredients
- 1 box vanilla wafers, Girl Scout Cookies, Oreos, etc.
- 2 packages cream cheese, softened
- 3/4 cups sugar
- 2 eggs
- 1 teaspoon vanilla
- cupcake liners

Preparation
Step 1
Mix cream cheese and sugar. Add eggs and beat. Add vanilla and beat.
So this is your plain cheesecake mix which of course you put over a vanilla wafer in a cupcake liner…. I was just about to do this when out of the corner of my eye I saw these little guys…
I mean, I used an Oreo cookie as the crust yesterday… Can I not use a Chips Ahoy cookie as crust today?!?! Yes. Yes I can!
I still wanted the plain cakes so I did half of the pan plain cheesecake over vanilla wafer and the other half…. Well, I also added some mini chocolate chips. Ooops! I am not even sure how much… One swift pour from the chocolate chip bag!
Stir and pour over the Chips Ahoy cookie… (So the two added ingredients are mini chocolate chips and Chips Ahoy cookies). You have to be a little picky about these cookies because some of them are not completely round. Use only the cookies that fit perfectly down in your liner.
Bake at 350 for 15 minutes.
You can top both of these with cherries, strawberries, drizzle with chocolate… anything that compliments a miniature cheesecake!
I made 3 different kinds. Samoa with chocolate drizzle, Dosido with peanut butter cup, and Tagalong with Butterfinger topping. All have the basic cheesecake filling I showed you a couple of weeks ago and use the cookie as the crust.
Oh and… I know the Oreo recipe was slightly different but you can use this plain cheesecake recipe and just add the crushed Oreos and cookie bottom. So really you could make 3 different types of mini cheesecakes out of this one batter! Talk about variety!!!
