Ingredients
- 2 tbsp vegetable or olive oil
- 1 coarsely chopped onion
- 1/2 cup sliced celery
- 1 cup dried beans
- 1 28oz. can kidney beans
- 1 28oz can diced tomatoes
- 1 clove garlic
- 1/2 cup sliced mushrooms
- 1 package of Knorr Swiss Minestrone Soup Mix
- 4 cups beef stock
- 2 cups water
- salt & pepper to taste

Preparation
Step 1
Soak the beans in water overnight.
In a large saucepan, over medium heat, sautee in oil, the onion, garlic, celery and mushrooms, approx 5 minutes or until translucent, add soup mix, beans, tomatoes, chicken stock and water.
Increase heat to high and bring to a boil, reduce heat & simmer 2 hours
