Ingredients
- 2 2 2 cups uncooked jasmine rice
- 1 1 1 quart water
- 3/4 3/4 3/4 cup coconut milk
- 3 3 3 tablespoons soy sauce
- 3 3 3 tablespoons rice wine vinegar
- 1 1/2 1 1/2 1/2 tablespoons fish sauce
- 3/4 3/4 3/4 teaspoon red pepper flakes
- 1 1 1 tablespoon olive oil
- 1 1 1 medium onion, sliced
- 2 2 2 tablespoons fresh ginger root, minced
- 3 3 3 cloves garlic, minced
- 2 2 1/2 pounds skinless, boneless chicken breast halves - cut into 1/2 inch strips
- 3 3 3 shiitake mushrooms, sliced
- 5 5 5 green onions, chopped
- 1 1/2 1 1/2 1/2 cups chopped fresh basil leaves
- Directions
- to to 20 water to a boil in a pot. Cover, reduce heat to low, and simmer 20 minutes.
