Banana Spice Cake

Ingredients
- CAKE:
- 2 1/3 cups all-purpose flour
- 2 1/2 teaspoon baking powder
- 1 1/2 teaspoon ground cinnamon
- 1 teaspoon salt
- 1/2 teaspoon ground ginger
- 3/4 teaspoon baking soda
- 2/3 cup butter, room temperature
- 1 3/4 cup pakced light brown sugar
- 3 eggs
- 2/3 cup buttermilk
- 1 teaspoon vanilla
- 3 large bananas, mashed, 1 1/2 cups
- FROSTING:
- 2 packages (8 ounces) cream cheese, room temperature
- 3/4 cup butter, room temperature
- 1 teaspoon vanilla extract
- 3 cups confectioner's sugar
- 1 banana, cut into 1/4 inch thick slices
- Cinnamon sticks, optional

Step 1
CAKE:
Preheat oven to 350 degrees. Coat 2 (9 inch) round cake pans with cooking spray. Combine flour, baking powder, cinnamon, salt, ginger and soda, reserve. At medium-high speed, beat butter and brown sugar until creamy, 3 to 4 minutes.
Beat in eggs, then buttermilk and vanilla. At low speed, gradually beat in flour mixture. Stir in bananas. Divide between pans. Bake 30 minutes or until toothpick inserted into centers comes out clean. Cool 10 minutes. Remove from pans; cool.
FROSTING:
At medium-high speed, beat cream cheese, butter and vanilla until smooth and fluffy. At medium-low speed, gradually beat in confectioners' sugar.
Place 1 cake layer on serving plate; spread with 3/4 cup frosting. Top with banana slices. Top with remaining cake layer. Spread top and side with remaining frosting. If desired, garnish with cinnamon sticks.
