Baked Apples with Cheddar and Walnuts

You can easily halve this recipe to make just 2 servings. Just about any other apple variety would work here, but be sure the apples are baked until tender before you fill them with the cheese and nut mixture.

  • 2 tbsp chopped walnuts
  • 4 McIntosh apples
  • 1/2 c. shredded reduce-fat cheddar cheese
  • 1/4 c spoon-size shredded wheat cereal, crushed

Preparation

Step 1

Preheat the oven to 350 degrees. Place the nuts on a baking sheet and bake until golden and fragrantk, 4-5 mintues. Transfer the nuts to a plate to cool.

Pare the skin from the top third of the apples. Core the apples, leaving a 1/2 inch base intact at the bottom and a 1 1/2 inch wide opening at the top. Place the appels in a small baking pan, cover loosely with foil, and bake until tenfer, about 15 mintues.

Combine the walnuts, cheese, and cereal in a bowl. Stuff the apples with the cheese mixture. Cover loosely with the foil and return to the oven. Bake until the cheese melts and the apples are tender, aobut 5 mintues.
Let cool 10-15 mintues before serving.
