  • 1 cup sifted flour
  • 1 teaspoon baking powder
  • 3 medium eggs
  • 1 cup sugar
  • 1/3 cup hot milk
  • 1 teaspoon lemon juice
  • Filling:
  • 2 cups milk
  • 1/3 cup sugar
  • 1/8 teaspoon salt
  • 3 egg yolks, lightly beaten
  • 3 tablespoons cornstarch
  • 2 tablespoons butter
  • 2 teaspoons vanilla
  • Glaze:
  • 2 ounces unsweetened chocolate
  • 1 teaspoon butter or margarine
  • 1 cup confectioners’ sugar
  • 3 tablespoons water

Directions:

Preheat oven to 350 degrees. Grease and flour two 9-inch cake pans.

Sift flour and baking powder together.

Beat eggs with an electric mixer on high speed until thick and light colored. Gradually add sugar, beating well after each addition. Continue beating until mixture is very thick. Add lemon juice and hot milk. Fold in flour mixture.

Divide batter between prepared pans. Bake until a toothpick inserted in the center comes out clean, about 25 to 30 minutes. Cool in pans on rack 8 to 10 minutes. Remove from pans. Cool completely.

While cake is baking, prepare filling: Combine milk, sugar, salt and egg yolks in a large measuring cup. Sprinkle cornstarch over milk mixture. Let stand until it can be mixed in smoothly. Pour into saucepan. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil 1 minute. Remove from heat. Stir in butter and vanilla. Cool.

Spread filling on one cake layer. Top with other cake layer.

To prepare filling: Melt chocolate with butter in the top of a double boiler. Remove from over heat. Stir in confectioners’ sugar. Beat in water until mixture is smooth.

Spoon glaze over cake.
