Ingredients
- 16 anaheim peppers..stems and seeds removed
- 4 T oil
- 1 c grated jack cheese
- 1 c crumbled goat cheese
- 1 T thyme
- 1 t rosemary
- 3 sage leaves, minced
- 1 c blue cornmeal

Preparation
Step 1
Heat oven to 450 degrees. Brush pepper with oil and roast to black, about 10 minutes. Cover pan and let peppers sweat about 15 minutes. Mix jack, goat cheese, thyme, rosemary and sage. Peel peppers. Put 2 T cheese mix into each pepper. Heat oil, roll peppers into cornmeal and sear, UNDISTURBED for first 2 minutes to keep meal from coming off.
