  • 1 cup white sugar
  • 1 cup canned pumpkin
  • 1 eggs
  • 1 teaspoon baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 cups all-purpose flour
  • FROSTING
  • 3 tablespoons butter
  • 4 tsp milk
  • 1 cup powdered sugar
  • 3/4 teaspoon vanilla extract
  • 1/2 cup packed brown sugar

Preparation

Step 1

1. Cream shortening, white sugar and pumpkin. Add eggs and mix well. Sift together the baking soda, ground cinnamon, salt and flour. Add to pumpkin mixture and mix well.
2. Drop from spoon to cookie sheet. Bake 10-12 minutes at 375 degrees.
3. To Make Frosting: Cook butter, milk, and brown sugar until dissolved. Add powdered sugar and vanilla. Spread over warm cookies.
