  • 1 lb. dry large lima beans
  • 3/4 lb. bacon, cut in 1/2 in. pieces
  • 1/2 lb. (or slightly more) brown sugar
  • 1/4-1/2 tsp mustard powder
  • 1/2 tsp thyme

Soak beans overnight, covering them with @ least 3-4 in. water. Drain, if needed, when ready to cook. Cover with fresh water & boil until they are nearly tender (about 20 min. once they come to a boil). Preheat oven to 300 degrees. Combine beans, along with 1 c. of the bean cooking water & remaining ingredients, in a 9X13 baking dish. Bake @ 300 degrees for about 2 hrs. or until quite brown on top & are juicy (not runny or dry).
