Ingredients

  • 500 g 500 g radishes 1 lb
  • 1 1 cucumber 1
  • 250 g 250 g feta cheese 8 oz
  • 250 g 250 g cherry tomatoes 8 oz
  • 25 ml 25 ml fresh dill, chopped 2 tbsp
  • 25 ml 25 ml red wine vinegar 2 tbsp
  • 2 ml 2 ml salt 1/2 tsp
  • 1 ml 1 ml ground pepper 1/4 tsp
  • 75 ml 75 ml olive oil 1/3 cup
  • 175 ml 175 ml fresh basil leaves 3/4 cup

Preparation

Step 1

Cut radishes, cucumber and feta into 1 inch (2.5 cm) pieces. Transfer to a medium mixing bowl. Halve the cherry tomatoes. Add tomatoe halves and dill to the radish mixture. Toss to combine. In a small bowl; combine vinegar, salt and pepper. Whisk in olive oil until combined. Drizzle vinaigrette over radish mixture and toss well. Tear basil leaves into pieces and toss into salad.
Serves 6
