Simple Scones *(GOOD)*

Can be prepared in the morning and refrigerated until time to bake. Add a few minutes to baking time if cold.

Ingredients
- 1 1/4 cup butter or margarine, softened
- 1 cup Self-Rising Flour (recipe follows)
- 1 egg, beaten
- 3 tablespoons milk
- 2 teaspoons sugar

Preparation
Step 1
In medium bowl cut butter into flour until particles are the size of small peas. Combine egg and milk; add to flour mixture and stir only until moistened. On floured surface knead gently a few seconds, then pat in 1/2-inch thick circle; sprinkle with sugar. With floured knife cut in 8 wedges. Place on greased baking sheet; bake in preheated 425 degree oven 12 to 15 minutes or until golden. Serve hot. Good with butter and jam.
*Self-Rising Flour:*
6 cups flour (lightly spooned into cup, then leveled off)
3 tablespoons baking powder
1 tablespoon salt
Sift or mix all ingredients together. Store in glass containers with tight-filling covers in a light room (not a dark cupboard.
