Ingredients
- Honey Lime Dressing:
- 3 Tablespoons honey
- 2 Tablespoons fresh lime juice
- 1 Tablespoon canola oil or vegetable oil
- 1 teaspoon grated lime zest
- Salad:
- 1-1/2 to 2 cups frozen sugar snap peas
- 3 cups torn romaine
- 1 avocado, cup into 1/2-inch pieces
- 1 large ripe mango, peeled and cut into 1/2-inch pieces
- 1 small red onion, thinly sliced and separated into rings
- 1/2 cup shredded unsweetened coconut, lightly toasted.

Preparation
Step 1
For the dressing, combine the honey, lime juice, canola oil and lime zest in a jar with ta tight-fitting lid. Shake to mix.
For the salad, cook the sugar snap peas using package directions; drain. Rinse with cold water to cool and stop the cooking process; drain. Combine with sugar snap peas, romaine, avocado mango and onion in a bowl and mix gently. Add the dressing and toss to coat. Sprinkle with the coconut.
