Ingredients

  • 4 boneless skinless chicken breasts
  • 3 Tablespoons extra virgin olive oil
  • 1 Tablespoon specialty vinegar (tarragon, balsamic, white wine or almost any kind except plain or cider)
  • 1 Tablespoon Dijon style mustard (you can add more depending on your taste)
  • OR
  • 1/4 cup Wishbone Olive Oil Vinaigrette or Balsamic Vinaigrette Dressing
  • 1 Tablespoon Dijon style mustard (you can add more depending on your taste)

Step 1

In a large shallow non aluminum bowl or plastic bag, combine dressing and mustard. Add pepper to taste. If making your own thoroughly combine the vinegar and oil then combine with the mustard. You can add other ingredients to the marinade, minced garlic, minced ginger, minced onions or minced shallots. Add meat and turn to coat. Cover, or close and marinate for at least 3 hours. Discard leftover marinade.
Prepare the grill for medium heat with rack about 4 inches from the coals or heat source. Remove chicken from the marinade , discard liquid. Sprinkle chicken on all sides with salt. Grill until cooked through 20 to 25 minutes depending on the breast size.
