    c almonds

  • c flour

  • 1⅔

    c sugar

  • ½

    t salt

  • 1

    t baking powder

  • 1

    t aniseed

  • lemon, lime, orange zest

  • 3

    eggs plus 3 yolks

  • 1

    t vanilla extract


Toast almonds at 350 for 10-15 minutes. Combine flour, sugar, slat, baking powder aniseed, and zests. Beat eggs and vanilla. Pour egg mixture into the flour mixture. Add almonds and mix just until the dough comes together. Dump the dough onto a floured work surface and knead. Portion the dough into three equal pieces. Roll each piece into a 10 x 2 log. Arrange logs 4 inches apart on baking sheets. Bake about 45 minutes. Remove and reduce temperature to 300. Cool logs for 10 minutes. Cut the logs on a slight diagonal into 3/4 inches. Place cut-side down on baking sheet and dry in oven 10-15 minutes.
