Ingredients
- 1 lb. cooked medium shrimp, peeled
- 1 small red onion, cut into rings
- 1 medium lemon, cut into slices (optional)
- 1/2 c. pitted ripe olives
- 4 oz. small pasta, cooked al dente
- 1/4 c. olive oil
- 1/4 c. chopped fresh parsley
- 1 1/2 tbl. red wine vinegar
- 1 1/2 tbl. lemon juice
- 1 garlic clove, chopped
- 1 bay leaf
- 1/2 tbl. minced fresh basil or 1/2 tsp. dried basil
- 1/2 tsp. salt
- 1/2 tsp. ground mustard
- 1/4 tsp. pepper

Preparation
Step 1
In a glass serving bowl, combine shrimp, onion, lemon slices, pasta and olives.
Whisk together the remaining ingredients. Pour over the shrimp mixture and stir gently to coat.
Cover and refrigerate at least 4 hours, stirring occasionally.
