Cucumber-Tomato Salad

Adding mint to this refreshing salad gives it an authentic flavour. It’s the perfect accompaniment to our Blue Menu Falafel.

Ingredients
- 4 Farmer’s Market mini cucumbers, roughly chopped
- 1 cup (250 mL) assorted PC Gourmet Grape Tomato Trio , quartered
- 2/3 cup (150 mL) chopped fresh herbs (parsley and/or mint)
- 1/3 cup (75 mL) finely chopped green onions
- 1 tbsp (15 mL) fresh lemon juice

Preparation
Step 1
1. Stir together cucumber, tomatoes, herbs, green onions and lemon juice.
2. For a Middle Eastern falafel platter, serve with PC Blue Menu Falafel, whole wheat pita bread, and hummus or baba ghanouj.
