Ingredients
- 1 1lb Sausage
- 2 C Shredded Cheese
- 8 (8in) Flour Tortillas
- 6 eggs
- 1 T Flour
- 2 C Half and Half
- Bacon Bits

Preparation
Step 1
Cook sausage in pan. In tortilas, put some sausage, cheese, and bacon. Roll and place seam down in a prepared dish. (Try to leave room between each for some of the egg to roll down.
Beat eggs and four, add half and half. our over enchiladas. Cover with cheese and bacon bits. Cover with foil.
Bake 35 minutes; uncover dish and back 10 minutes longer.
Let set for a few minutes to set up.
They were wonderful . . . but from this receipe I only made 5 enchiladas in a large pyrex . . but one was MORE than enough per person!
